Flavorful rice cooked in very tasty, delicious mutton stock. Its aroma is unbeatable when this biryani is ready!

  • 1lb Mutton cut into big pieces
  • 2cusp Basmati Rice
  • Mint Leaves and Coriander leaves -finely chopped
  • 2tbsp Oil
  • 2tsp Ginger and Garlic paste
  • 1/2tsp Turmeric powder
  • 1tsp Lemon juice
  • Garam Masala powder
  • 1tsp Shazeera
  • Whole Garam Masala-Cloves,Cardamons,Cinnamon sticks ,Bay leaves
  • 1 big Onion-diced thinly
  • Salt to taste
  • 6 Green Chillies
  • Saffron strands
  • Milk
  • Wash and soak rice in enough water for 30 mins.
  • Wash mutton well and cut in to big pieces. Add ginger and garlic paste in to a bowl, turmeric powder, lemon juice, mint leaves, garam masala powder, coriander leaves, mix well, add mutton pieces in to it, mix well, cover and marinate for 3 hours.
  • And then add marinated mutton into pressure cooker, then add green chillies, salt to taste, 2 cups water and cook till meat is tender.
  • In another pan,heat oil and add onion and fry it till golden color.And then take them out and let it cool for 5 mins and then crush them finely.
  • Add half of onions to the mutton and mix it.
  • In a cooking pot,add water,cloves,cardamons,shazeera,cinnamon sticks and bay leaves and some coriander and mint leaves and bring the water to boil.
  • Once the water starts boiling add the soaked rice and boil it.Once the rice is cooked,drain the excess water and take out rice in a different dish.
  • Now in the main cooking pot,layer half of the rice at bottom and then layer of mutton and then top it with a layer of rice again.
  • Take saffron stands mixed in milk and sprinkle it on the top of rice.Add crushed and fried onions.Cover the lid and leave it on simmer for 10-15 mins.
  • Serve with raita, salad or pickle!
