Semolina Cake, popularly known as Basbousa are small cakes made of semolina soaked in sugar syrup. These are perfect with coffee or tea.

Ingredients:
  • 1 1/4 cup Semolina
  • 1 1/2 cup Dessicated coconut
  • 1/2 cup All purpose flour
  • 3/4 cup Sugar
  • 1 tsp Baking powder
  • Butter (melted)
  • 1 Egg
  • 1 cup Milk or 1 cup Yogurt
  • Saffron ½ g
  • 1 tsp Cardamon-optional
  • 3 drops Almond essence
  • Sugar Syrup:
    • 1 cup Sugar
    • 1 cup Water
    • 1/2 tsp Lemon juice
    • 1 tsp Rose water
Method:
  • Take a bowl mix butter, semolina, desiccated coconut, all purpose flour, sugar, baking powder, butter, egg, milk with saffron and almond essence into a batter.
  • If the batter is very thick add a little of milk.
  • Butter or oil your pan or oven proof casserole and add the batter in it then level it off and cut it any shape you like.
  • Decorate with almonds.
  • Bake at 350 degreesF for 30 to 40 minutes depends on your oven temperature till golden color on top.
  • Pour the warm sugar syrup on the top of the basbousa.
  • Preparing Sugar Syrup:
    • In a saucepan add sugar,water and lemon juice.
    • Cook over medium to low heat until the mixture comes to boil.
    • Continue boiling for 5-10 minutes till the syrup is thick.
    • Add rose water and then let it cool down.
