Quick and easy curry Of French Beans With Potato that goes well with chapati and rice.French beans are a great source of carbohydrates and dietary fibers. I cook this just very often as it is simple.

Ingredients:
  • 1/2 kg French Beans
  • 1 Potato
  • 1 Onion-finely chopped
  • 1 Tomato-finely chopped
  • 1 tbsp Ginger and Garlic paste
  • 1 tbsp Red chili powder
  • 1/4 tbsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • Salt to taste
  • Oil
  • Coriander leaves-finely chopped
  • Mint leaves-finely chopped
Method:
  • Wash and cut potato and French beans into cubes ,or in a shape you want to cut it.
  • In a large non-stick saucepan or pressure cooker add oil at medium heat, add onions and fry till they change color to golden brown.
  • Add ginger and garlic paste,fry for 1 minute.And then add chopped tomato, red chili powder,turmeric powder,salt and cook till tomato are soft and mushy.
  • Next add the chopped green beans, potato and 1/2 cup of water as per the requirement and cook well.
  • Do not cook on a high heat,simmer heat and add the coriander leaves & mint leaves. Cover the pan and leave for 15-20 minutes until the green beans and potato are soft & tender.
  • When done add the coriander powder and cumin powder and stir for 5 minutes.
  • Remove from the heat and serve with plain rice or chapati.
