Vegetable pulao makes a delicious and simple main course rice preparation. Best served with raita.
- 2 cups Basmati rice
- 3 cups Warm Water
- 1 1/2 tbsp Ghee-clarified Butter
- 1/2 tsp Cumin seeds
- 2 Cinnamon sticks
- Bay leaves
- Cloves
- 1/2 cup Onion-finely chopped
- 1/4 cup Green and Red bell pepper-finely chopped
- 1 tbsp Ginger and Garlic paste
- 1 tsp Green chilli paste
- Salt to taste
- 1/2 cups Diced Carrots
- 1/2 cup Green peas
- 1/2 cup Beans
- Saffron strands
- Wash,rinse and soak the Basmati rice in water for 20 mins.
- Take a pan and add ghee-clarified butter or oil,add cumin seeds,cinnanom stick ,cloves,bay leaves and then chopped onions.Cook the onions till transclucent.
- Next add green and red bell peppers and let it cook and then add ginger and garlic paste and green chilli paste.
- Now add the veggies-carrots,green peas and beans.Cover the pan and cook for few mins till the veggies are half done.
- Next add rice and salt and give a quick stir.Let it cook for few mins.
- Then add warm water and few saffron strands.Cover and cook till the rice are completely done on low heat.
- Serve hot with raita or pickle.
