Vegetable pulao makes a delicious and simple main course rice preparation. Best served with raita.

  • 2 cups Basmati rice
  • 3 cups Warm Water
  • 1 1/2 tbsp Ghee-clarified Butter
  • 1/2 tsp Cumin seeds
  • 2 Cinnamon sticks
  • Bay leaves
  • Cloves
  • 1/2 cup Onion-finely chopped
  • 1/4 cup Green and Red bell pepper-finely chopped
  • 1 tbsp Ginger and Garlic paste
  • 1 tsp Green chilli paste
  • Salt to taste
  • 1/2 cups Diced Carrots
  • 1/2 cup Green peas
  • 1/2 cup Beans
  • Saffron strands
  • Wash,rinse and soak the Basmati rice in water for 20 mins.
  • Take a pan and add ghee-clarified butter or oil,add cumin seeds,cinnanom stick ,cloves,bay leaves and then chopped onions.Cook the onions till transclucent.
  • Next add green and red bell peppers and let it cook and then add ginger and garlic paste and green chilli paste.
  • Now add the veggies-carrots,green peas and beans.Cover the pan and cook for few mins till the veggies are half done.
  • Next add rice and salt and give a quick stir.Let it cook for few mins.
  • Then add warm water and few saffron strands.Cover and cook till the rice are completely done on low heat.
  • Serve hot with raita or pickle.
